So tonight was a first attempt at making Pakoras. I decided on carrot, onion, green pepper as the vegetables to put in the dough and fry. Those were mainly chosen as that is what I had in the fridge.
So the recipe I used after finding some online, talking to the neighbors and looking at what spices I had in the kitchen was the following:
1.5 cups of basen flour (chickpea flour) (+ about another 1/4 cup when I was mixing to get a thicker consistency)
1 tsp garam masala
1.5 tsp tumeric
1 tsp coriander
1 tsp cumin
1/2 tsp salt
1 cup water
~2 cups vegetables - diced small (one carrot, one onion, one green pepper)
oil for frying (we used soyabean oil)
The measuring cup I'm using is a little suspect in the kitchen here, hence the addition of some more flour.
Steps
1. combine flour and spices, mix well.
2. add water mix well to get a thick batter
3. add vegetables and mix until encorporated
4. heat oil in pan, drop mixed bater into pan and cook till lightly brown, flip and repeat on other side.
5. remove from oil and wrap in paper towel as others cook.
You could play around with the spice and add some chili or curry powder.
L and the kids liked them but we decided they need a dipping sauce though. Kids used ketchup and were happy, we had some BBQ sauce that came with kebabs we ordered last week and that was good. I'm thinking some kind of tamarin sauce, but will have to come up with something.
